Hi,
I created the correct employee and was able to figure out how to asign working days but when I attempt to log in as a customer the system will not let me actually complete the appointment.
Instead, even though the days are indicated as available and I make it to the time to choose screen, it keeps telling me that that time is not available.
Any help would be appreciated.

Hello,
please have a look at these settings for the service:
Appointment Earliest Time From Now
Appointment Latest Time From Now
The "latest" time might be smaller than "earliest" one so it can be a problem. Alternatively could you please give me a temporary admin access to your hitAppoint system, I will try to see what is the problem.
