I'm building a website for my client who conducts workshops on particular days.
For example, "Service 1" is on Mondays, "Service 2" is on Tuesdays, etc.
Is there a way to allocate these working days/hours to particular services for booking?
At the moment, it seems all services are given the same working hours, which doesn't suit my client's website needs.

Hello,
currently yes, all the services are given the same working hours. A workaround for this might be using the MultiStaff version, where you can assign Service1 to Staff1, and Service2 to Staff2. The make the Staff1 work on Mondays and Staff2 on Tuesdays. The staff accounts may be virtual, representing on physical person.
