Right now I have one schedule that I prefer not to delete to check this. I'm not able to create a second, for there's no option to do so. Are we limited to one schedule or is something wrong?

this might be a little confusion caused from my side. In the admin panel, the "Schedules" tab is to manage existing schedules, but to create a new one, you need to go to the provider edit screen.
Please go to "Users >> Browse", then choose a provider, click her username to proceed to the provider edit form, then choose the "Schedules" subtab. Then there will be the "Create Schedule" link.
